Heat a large pot (with a lid) to medium-high heat and add olive oil. Add onions and peppers then sauté until softened, about five minutes. Add kielbasa and cook for a few minutes. Add chicken and stir to combine.
Add rice mix plus as much water as the package calls for. Stir and bring to a boil. Reduce heat to low, cover, and cook for 20-25 minutes or until rice is tender.
Remove lid and stir in frozen peas. Let warm through for a few minutes then serve.
Notes
Vigo brand yellow rice mix is my favorite. I usually find it by the Spanish rice in grocery stores.
