Chicken breast strips are marinated with honey, lime, and bold seasonings then sauteed in a skillet with onions and peppers. Easy take on chicken fajitas!
3-4boneless skinless chicken breasts,cut into 1/2 inch strips
2tablespoonshoney
Juice of 1 fresh lime,about 2 tablespoons
1tablespoonchili powder
1tablespoonground cumin
2 teaspoonsonion powder
2 teaspoonsgarlic powder
2 teaspoons salt
1/2teaspoon black pepper
2tablespoonsolive oil
2 bell peppers (any color), cut into strips
1 largered onion, cut into strips
Additional ingredients and toppings:
Flour tortillas
Shredded cheddar or Monterrey jack cheese
Chopped cilantro
Salsa
Avocado slices or prepared guacamole
Sour cream
Instructions
Placed sliced chicken in a plastic zip top bag. Add honey, lime juice, and seasonings. Close bag and massage to incorporate ingredients. Place in fridge and marinate for 2-24 hours.
Heat a large non-stick skillet to medium-high. Add 1 tablespoon of olive oil. Add peppers and onions then cook until soft. Remove from pan and set aside.
Add another tablespoon of olive oil to pan then add chicken. Cook, stirring often, until chicken is cooked through (7-10 minutes).
Add peppers back to pan and stir (or leave separate for picky eaters).
