Easy Skillet Chicken Fajitas

Chicken breast strips are marinated with honey, lime, and bold seasonings then sauteed in a skillet with onions and peppers. Easy take on chicken fajitas!

Ingredients
  

  • 3-4 boneless skinless chicken breasts, cut into 1/2 inch strips
  • 2 tablespoons honey
  • Juice of 1 fresh lime, about 2 tablespoons
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 bell peppers (any color), cut into strips
  • 1 large red onion, cut into strips

Additional ingredients and toppings:

  • Flour tortillas
  • Shredded cheddar or Monterrey jack cheese
  • Chopped cilantro
  • Salsa
  • Avocado slices or prepared guacamole
  • Sour cream

Instructions
 

  • Placed sliced chicken in a plastic zip top bag. Add honey, lime juice, and seasonings. Close bag and massage to incorporate ingredients. Place in fridge and marinate for 2-24 hours.
  • Heat a large non-stick skillet to medium-high. Add 1 tablespoon of olive oil. Add peppers and onions then cook until soft. Remove from pan and set aside.
  • Add another tablespoon of olive oil to pan then add chicken. Cook, stirring often, until chicken is cooked through (7-10 minutes).
  • Add peppers back to pan and stir (or leave separate for picky eaters).
  • Serve on tortillas with toppings of your choice.
