Country pork ribs are slow cooked in a sauce made with brown sugar, soy sauce, rice vinegar, chili garlic sauce, ginger and more for the most flavorful, tender ribs.
1 tablespoon fresh peeled ginger (about 1 inch piece), minced or finely grated
2teaspoons onion powder
1 1/2 teaspoonskosher salt
freshly ground black pepper, to taste

For garnish and serving:
1bunchgreen onions, sliced
1tablespoonsesame seeds

Instructions
Place ribs in a 6-8 quart slow cooker.
In a medium-sized bowl, add ketchup, soy sauce, brown sugar, honey, rice vinegar, chili garlic sauce, garlic, ginger, onion powder, salt and pepper. Whisk to combine then pour over ribs.
Cook on low for 6-8 hours or until ribs are "fall apart" tender. Remove ribs from sauce, place on a platter, then cover with foil to keep warm.
Use a fine mesh strainer to strain the cooking liquid into a saucepan. Take out about 1/3 cup using a cup or small bowl. Add cornstarch and stir with a fork until no lumps remain. Pour back into sauce. Bring to a boil, stir often, until it thickens into a glaze (3-5 minutes).
Pour half of glaze over the ribs then garnish with green onions and sesame seeds.
Serve with cooked rice. Use remaining sauce for spooning over rice if desired.
